Exactly what’s in my lunch box

Well hey!! I’ve been getting a lot of questions about my meal plan and what’s in my lunch box. If you’ve been around me for any length of time you’ll know that I almost never go anywhere without my lunch box, packed with yummy snacks in case I get hungry.

Packing food is the best way I’ve found to stay on track being healthy and it’s also less expensive! Instead of eating 3 meals a day, I typically eat 5-6. When I go to school I pack 2 of them; my meal before lunch and then lunch.


First of all can we appreciate how cute this lunch box is? I mean, if you’re going to carry one around, at least make sure it’s cool right? 😉

My second meal is generally plain greek yogurt, a cup of berries and some almond butter. I switch between blueberries, blackberries and raspberries. Plain greek yogurt isn’t the tastiest, so I throw some cinnamon in there and it helps a lot!


Lunch is my favorite part. Who likes Chipotle?! Well get excited because this is basically Chipotle in a jar. Take any old mason jar and start layering your favorite goodies. Mine starts with brown rice on the bottom, then black beans, then grilled chicken, then roasted yams, and topped with avocado!


You can dump it out into a bowl and eat it or you can just bring a giant fork with you and eat it straight from the jar!
